New Favorite Breakfast

This one could give my beloved eggs and toast a run for it’s money!!!

Raspberry Chobani

Chia seeds mixed in

Perfect granola on top. I bought this granola from Costco and tried it for the first time today. It was so good! Perfect amount of clusters and sweetness. I will for sure be buying more of this!!!

Can’t wait to try this with different flavors of yogurt!

Buffalo Chicken Dip

I first tasted this dip at my friend’s house when I went there for a jewelry party and it’s what turned me on to my love of hot sauce.  I made this today for my cousin’s birthday party, and it’s been a staple of family gatherings recently. I thought of  Biz  when I was making it and her love of hot sauce!!  This dip is not healthy by any stretch of the imagination, but it is dang delicious.

Ingredients:

1 can chicken

1 cup Ranch dressing

1/2 cup Buffalo Sauce or any type of hot sauce

1 container of cream cheese

Shredded Cheese

1. Drain and chop chicken

2. Add in cream cheese, ranch and hot sauce

3. Mix until well blended. Sometimes I’ll put this in the microwave for a minute and it makes it easier to blend.

4. Pour into a casserole dish

5. Bake at 350 for 15 minutes

6. Top with shredded cheese and bake for another 15 minutes until bubbly.

We served this with pita chips today, but it goes perfectly with just about anything…including celery!!

Not even sure if I have any readers left…but I hope so!!! This summer has been so crazy with moving, vacations and having 3 very active kids at home all day. We had some issues with our house last week (a post for another day), my 3 old wound up with 3 stitches in his forehead on the same day…it’s been nuts.

We are getting close to starting school, and I think we’re all ready. Ready for the schedule, routine, and being with friends. We have a couple more trips to the sand dunes planned, a wedding and our 10 year anniversary coming up in the next few weeks to finish this summer off with a bang!

Breakfast:

2 eggs over easy on toast

Herbal tea and a banana on it’s last leg

Lunch:

Salad Beast

Romaine lettuce base

Cucumbers, pickles, celery

Cheese and an olive oil vinaigrette

With a side of celery and an orange on the side

Getting ready to cuddle up with a book and then bed soon. Some days I wonder if I’m 30 or 90…

Leo’s Coney Island

One of my favorite spots to go for breakfast is Leo’s Coney Island of White Lake.

They have everything from oatmeal to amazing omelettes with anything you can imagine stuffed inside! The service is fast and friendly, the prices are perfect, and the food is awesome! No matter what I get for breakfast, I’ve never left disappointed.

Saturday morning my sister, mom and our daughters went to Leo’s for breakfast.

I had one of the their breakfast specials, two eggs, sausage and wheat toast. So good!!

Foodbuzz Lunch

When I first started reading healthy living and food blogs I was so in awe of all of the featured publishers and all the goodies they all received from Foodbuzz. Now, that I’m a featured publisher and receive said goodies, it’s awesome!! I have been getting loads of freebies and coupons lately, but haven’t had a chance to try anything out yet. I was trying to figure out what to make for lunch today and saw the bag of Tyson Grilled & Ready Chicken Breast Strips hanging out in the freezer so I decided to make something with them.

Lunch: Smart & Delicious Wrap, Tyson Grilled & Ready Chicken Breast Strips, Black Beans and I mixed in some green salsa into the beans, topped with a little cheese and put under the broiler until everything was warm and melty.

I was a little worried about the chicken, but it was really good! It had an almost spicy taste to them, but the 3 year old had some and ate without complaint. I don’t know how often I’ll use these, but it’s great for a quick meal!

I also had a bowl of strawberries and blueberries on the side, I could have had this bowl x5, but I restrained myself!

The 3 year old is currently napping, the house is clean and I’m watching old episodes of One Tree Hill; see you for dinner tonight!

Friday Weigh In #1 (5.6.11)

Since I haven’t weighed myself in nearly 2 months, I have no idea what my last weight was so this is a jumping off point.

Weight: 208.8

I am so excited, my sister and her daughter are on their way here from California and will be here later this evening, I can’t wait!!! The last time she was here was for my Dad’s funeral, so it will be nice to have a happy visit this time 🙂 I will be taking her to all my favorite foodie places and hopefully the weather cooperates so we can take the kiddies to the park.

Breakfast: Hope you’re not sick of eggs, because I’m not! This morning was a simple egg sandwich and sliced strawberries.

It’s been a busy day so far getting everything cleaned up, laundry done, etc. so we can have fun tonight when they get here 🙂

Fun with Picnik

The husband has been trying to teach me how to use Adobe and even harder CS3…I’m a lost cause and can’t remember anything and almost kicked the desktop earlier because I was so freaking frustrated! Eventually, I will get the hang of it, but until that happens, I found a new website; Picnik. It’s free (but you can pay for premium options) and lets you edit photos, create collages and other fun goodies and it’s easy!! I didn’t really have anything exciting to talk about tonight, so I did some fun editing with dinner pictures 🙂

Dinner: Egg sandwiches with turkey bacon, broccoli and strawberries.

I have been doing more updates today with not as much info and it’s SO much easier than trying to cram an entire day in one post!!!

What I Ate Wednesday

For weeks I have been reading everyone else’s WIAW posts, I decided to join the party and add mine.


Breakfast: Steel cut oats (coconut milk, protein powder, chia seeds)

Topped with Lemon Curd and a sliced banana.

Lunch: Trader Joe’s Turkey Chili. Hands down the BEST turkey chili ever!

With a toasted flat out wrap with a little cheese and garlic salt, quartered and stuck under the broiler for a few minutes.

Dinner: Chicken Pad Thai from our favorite Thai restaurant: Siam Fusion.

Pad ThaiModern style stir-fried thin rice noodles with tofu, bean sprouts, ground peanuts, egg, and green onion.


After the ice

Workout: None. My back, hamstrings and quads were so unbelievably sore this morning, my body was screaming for a morning off and I listened. I’m feeling a lot better this evening and ready for tomorrow morning!

Breakfast: 2 eggs on toast- thanks to Foodbuzz and Nature’s Pride I was able to sample Nature’s Pride new bread. I have a few other ideas to use this bread, but the first one was to make dippy eggs, this toast was so unbelievably filling, I could barely finish my breakfast! And at only 100 calories per slice…SCORE!

After an ice storm, when the sun is shining, everything shines and sparkles and it’s beautiful! This morning was no exception!! After dropping off the two oldest at school, I came home and took a zillion pictures outside.

Lunch: Leftovers from last night’s dinner. Wild and long grain rice, chicken apple sausage, topped with some corn and then a blood orange on the side.
